The Brewery / Taproom

Making the beer is the romantic part and the expensive part. The business part is the taproom: a pint poured to a guest at the bar earns several times what the same beer earns shipped to a distributor. Heavy capital and regulation get you in the door; the taproom margin decides whether the tanks ever pay for themselves.

Cited sources Typical bands for this kind of business, compiled from the public sources listed under Sources and method; they are a synthesis, not figures copied from any one source. Estimates, not forecasts; a specific business varies with its location, lease, equipment and owner. Last reviewed 2026-10-26. smbnest is a self-assessment tool, not individualized advice.

A fit if you…

  • Can brew consistently at commercial scale, or hire someone who can
  • Will treat the taproom as a hospitality business, not an afterthought
  • Have the capital and patience for a slow, equipment-heavy ramp
  • Can navigate licensing, distribution law, and compliance

Probably not if you…

  • Think a great recipe is the same as a great business
  • Are undercapitalized for tanks, build-out, and a long ramp
  • Plan to lean on distribution margins to make the money
  • Want a passive or quickly profitable operation

Sources & Method

Figures are compiled from the public sources below; the bands are a synthesis of them, not copies

How these numbers were built: sale prices, owner earnings, revenue, and resale multiples come from BizBuySell’s 2021-2025 brewery benchmarks; brewery counts, openings and closings from the Brewers Association’s 2025 annual report, and taproom-versus-distribution margins and mix from its industry data; survival rates from BLS Business Employment Dynamics; SBA loan volume and charge-offs from the SBA 7(a) loan data for breweries; federal licensing from the TTB; and the cost to open from the opening kit, priced item by item from brewhouse, tank, glycol, and keg suppliers, used-equipment listings, and a published 7 bbl brewery budget. Labor, ingredient, and other operating cost splits are planning estimates from small-brewery norms, set so the starting margin matches what sold breweries report. Where credible sources disagree, we show the conservative range. These are starting assumptions; the moment you enter a real building’s rent, your taproom traffic, and your equipment quotes, your numbers should replace ours. Figures are current as of 2025-2026.

SDE margin and revenue figures anchor to BizBuySell five-year (2021-2025) sold-business benchmarks for the brewery category; taproom-versus-distribution margin and revenue-mix figures anchor to Brewers Association industry data. Cost-ratio splits for labor, ingredients, and debt service are estimated from general small-brewery operating norms since no single public source breaks a brewery P&L down to that level of detail.
